Our Hospitality Family

On site at the Jensen Marina, we are operating a wood-fired food truck and drink shack in Bessie Jensen’s former pea patch: Hinoki & Heave Ho!. We also provide coffee, pastries, & cafe fare for our guests and neighbors in the old machine shop on NE Boat Street. We share open seating under canopies for all-season dining, Seattle-style at Saint Bread.

In Fremont, we are serving roasted vegetables and pizzas with beautiful Northwest ingredients on a committed-to-only-what-we-love and what we call Italian-American-ish menu, rounded out with Midwestern hospitality at Tivoli. In the back of the restaurant, we offer a comprehensive but selective (only-what-we-love!) wine shop and wine & cocktail bar that’s one part present and two parts nostalgia, in Postale.

In Spring 2025, in North Lake Union, we will be bringing our Japanese-American heritage and experience to The Wayland Mill, a commitment to yoshoku Americana cuisine, which is to say, another refusal to be labeled anything without a hyphen other than irreverant and honest.

 

Saint Bread is a bakery and community space on the Portage Bay waterfront near the University of Washington. 

The name comes from the Danish words for true bread--sandt brod--and this playful interpretation also nods to Plane Bread, our founding baker’s former bread business, and the belief that tending to something is a sacred act.

Before it was a bakery, 1421 Boat Street was owned by the Jensen family of boatbuilders, and housed the Jensen Motor Boat Company. With a wink and a nod of thanks, we hope to honor their legacy as Saint Bread, with the Jensen Marina Project, and as stewards of the great space they so carefully built with care by hand.

Perma-parked in a corral by the moorage at the marina, Hinoki combines a love of outdoor & wood-fired cooking with a passion for casual and delicious bites.

Tivoli is a gathering space honoring our nostalgia for the Midwest, our ongoing relationship with the cuisine of Italy & its diaspora, our professional experiences on the East & West Coasts, and our commitment to our chosen home in Seattle.

Located in Fremont (locally, cosmically known as ‘The Center of the Universe,’ Tivoli serves wood-fired pizzas, seasonal vegetables and salads, and creative cuisine that draws inspiration from what our experience and our hearts have earmarked as we live, work, and travel.

Postale holds some of our favorite bottles from around the world to drink here and to take away. Our wine bar and selection, as well as the cocktail program, was born out of nostalgia for where we have been, and longing to be content where we are - a feeling often comforted by good drink and nourishing food.

Interlacing the heritage of Western influence on Japan’s culture, The Wayland Mill is an all-day bistro kissaten in a modern vein.

Nestled along the Burke-Gilman Trail in Seattle’s beautiful Northlake Commons, we serve fun & fabulously delicious variations of regional American cuisine through the lens of Japanese flavors & ingredients while ascribing to the hospitality ideal of omotenashi. This is our purpose, our ikigai.
